Where to stay in South of France?

Can anyone give me some suggestion on where in South France to stay, or go on a weekend with my girlfriend?
It was her who insisted so much on going there, but now she has no time to take care of such details. So, it would be great to hear it from somebody who has some experience with staying in South of France.

Have you thought of St. Tropez or Cannes?
Or maybe Nice? To me all the destinations are equally attractive, and I don’t think that either can be a bad or wrong choice. I have honestly never been to this part of France yet, but I think that if I could choose, some of these three towns would definitely be what I would choose. People say that the Mediterranean has many beautiful and romantic spots.

I've been to Nice in the summer time. It was amazying. I stayed at my friend's place, so I can't help you with accommodation tips but my holiday was fantastic experience. It was crowded and expensive but I don't regret a penny. It was August, the weather was hot, no rain at all. I loved the beaches.

I loved eating Socca, which is a traditional plate from southeastern France.
